Adventures in Gluten Free Cooking

It being Sunday, and James being home, I decided to make pancakes. We’ve done this before, but every new recipe or Pancake Mix from Some Company makes it all brand new all over again….

Today I picked Arrowhead Mills’ Wild Rice Pancake & Waffle Mix (ingredients on pkg says: organic whole grain brown rice flour, organic wild rice flour, baking powder (monocalcium phosphate,sodium bicarbonate, corn starch), organic soymilk powder, zanthan gum. Directions on pkg consist of (I doubled them, so will double them here):

1 cup mix

2 eggs, beaten

2 tbsp oil

2 tbsp honey (I left this out; it was sweet enough with the hempmilk)

1 cup milk (I used hempmilk)

1/2 tsp salt

After making the first pancake, it was far too flat, so I added 1 teas of baking soda to the mix. The result was just fine.

Overall review of mix though is not as good as I’d like. I think a bit more zanthan gum would have given them a little more substance. Also, as with all of Arrowhead Mills’ brown rice products, they were a bit gritty. Oh, and they ~really absorb too much syrup.
